0-Point Cheesecake

0-Point Cheesecake

Ingredients:

  • 2 cups non-fat plain Greek yogurt
  • 8 oz fat-free cream cheese (softened)
  • 1/2 cup sugar-free vanilla pudding mix (instant)
  • 1 tbsp vanilla extract
  • 1/4 cup unsweetened applesauce (for sweetness and moisture)
  • 2 large eggs (optional, but helps set the cheesecake)
  • Sweetener of choice to taste (like Stevia, Splenda, or your preferred WW-friendly sweetener)

Optional for the crust (if desired for a slight increase in points):

  • 1/2 cup crushed graham crackers (or low-point alternative, like crushed fiber-rich cereal or oatmeal)
  • 1 tbsp light butter or butter spray

Instructions:

  1. Preheat Oven: Preheat your oven to 325°F (163°C). If using a crust, lightly grease the bottom of a springform pan or a regular cake pan. If you’re not using a crust, you can just spray the pan lightly with cooking spray to avoid sticking.
  2. Prepare the Crust (optional): If you’re adding a crust, combine the crushed graham crackers with 1 tbsp light butter or butter spray until evenly mixed. Press the mixture into the bottom of the pan to form a crust. Bake for 5-7 minutes until lightly golden, then set aside to cool.
  3. Make the Cheesecake Filling:
    • In a large mixing bowl, combine the fat-free Greek yogurt, softened fat-free cream cheese, sugar-free vanilla pudding mix, vanilla extract, and applesauce.
    • Use a hand mixer or whisk to blend everything together until smooth and creamy. Add sweetener to taste, depending on how sweet you want the cheesecake.
    • Add the eggs and beat gently until everything is well incorporated.
  4. Bake the Cheesecake: Pour the cheesecake batter into your prepared pan (over the crust, if you’re using one). Tap the pan lightly to remove any air bubbles and smooth the top with a spatula.
    • Bake for 30-35 minutes, or until the center is set and the edges are lightly golden. If it’s still a little wobbly in the center, that’s okay—it will firm up as it cools.
  5. Cool: Let the cheesecake cool completely at room temperature, then refrigerate for at least 2 hours to allow it to firm up further.
  6. Serve: Slice and serve! You can top it with fresh berries, a drizzle of sugar-free syrup, or a sprinkle of cinnamon for extra flavor, but remember that these toppings can add points if you’re tracking carefully.

WW Points (Approximate per serving):

  • Freestyle Points: 0 points per serving (if you omit the crust).
  • SmartPoints: 0 points per serving (again, without the crust).
    • If you choose to add a crust or toppings like berries, the points will vary slightly, but the cake itself remains virtually 0 points!

Tips:

  • Add Toppings: For a little extra flavor, top with fresh fruit (such as strawberries or blueberries) or a drizzle of sugar-free chocolate syrup. Just keep in mind that toppings can add a few points depending on what you choose.
  • No Crust Option: For a truly low-point option, skip the crust. The cheesecake is creamy and delicious on its own!
  • Flavor Variations: Feel free to mix in a little lemon zest, cinnamon, or even pumpkin puree for a seasonal twist.

This 0-Point Cheesecake is a guilt-free, creamy dessert that satisfies your cheesecake cravings without the extra points. Perfect for any WW follower looking for a lighter treat!
