Ingredients:
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened almond milk (or any milk of your choice)
- 1 large egg
- 1 tablespoon unsweetened applesauce
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
- Cooking spray for greasing the pan
Instructions:
- In a mixing bowl, whisk together the flour, baking powder, and a pinch of salt.
- In a separate bowl, beat the egg and then add the unsweetened almond milk, unsweetened applesauce, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Heat a non-stick skillet or griddle over medium heat. Lightly coat it with cooking spray.
- Pour 1/4 cup of the pancake batter onto the skillet for each pancake.
- Cook until bubbles form on the surface of the pancake and the edges start to look set. Flip the pancake and cook until the other side is golden brown.
- Repeat the process with the remaining batter, adding more cooking spray to the pan as needed.
- Serve the pancakes warm and enjoy!
