1 Point Pancakes: Weight Watchers Friendly – Fluffy, No Bananas!

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened almond milk (or any milk of your choice)
  • 1 large egg
  • 1 tablespoon unsweetened applesauce
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Cooking spray for greasing the pan

Instructions:

  1. In a mixing bowl, whisk together the flour, baking powder, and a pinch of salt.
  2. In a separate bowl, beat the egg and then add the unsweetened almond milk, unsweetened applesauce, and vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly coat it with cooking spray.
  5. Pour 1/4 cup of the pancake batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface of the pancake and the edges start to look set. Flip the pancake and cook until the other side is golden brown.
  7. Repeat the process with the remaining batter, adding more cooking spray to the pan as needed.
  8. Serve the pancakes warm and enjoy!
