A Chicken Salad Sandwich

A Chicken Salad Sandwich

Ingredients:

  • Cooked chicken (shredded or cubed, about 2 cups)
  • Mayonnaise (1/4 to 1/2 cup, depending on how creamy you want it)
  • Dijon or yellow mustard (1-2 tsp, optional, for a bit of tang)
  • Celery (1-2 stalks, finely chopped, for crunch)
  • Red onion (1/4, finely chopped, optional)
  • Grapes or apples (chopped, optional, for a touch of sweetness)
  • Salt and pepper (to taste)
  • Lettuce (for extra crunch)
  • Bread (whole wheat, white, or a soft roll, as preferred)

Instructions:

  1. Prepare the chicken: Use cooked chicken, either shredded from a rotisserie chicken or leftover cooked chicken breasts. Shred or cube it into bite-sized pieces.
  2. Mix the salad: In a bowl, combine the chicken, mayonnaise, and mustard. Stir in the chopped celery and red onion. If you’re using grapes or apples, fold them in for sweetness and texture.
  3. Season: Add salt and pepper to taste, adjusting the seasoning as you go. You can also add a splash of lemon juice for some acidity or herbs like dill or parsley for extra flavor.
  4. Assemble the sandwich: Spread a layer of chicken salad onto a slice of bread. Top with lettuce and place the other slice of bread on top.
  5. Serve: Enjoy it as is, or for an extra touch, serve it with some chips, pickles, or a side salad.

This sandwich is both satisfying and versatile, with the option to customize the filling to your tastes!
