Air Fryer Fried Rice
Ingredients:
- 2 cups cooked rice (preferably cold, day-old rice works best)
- 1 tablespoon oil (vegetable, sesame, or any cooking oil you prefer)
- 1/2 cup mixed vegetables (carrots, peas, corn, bell peppers, etc.)
- 2 eggs, beaten
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Optional: green onions, sesame seeds for garnish
Instructions:
- Preheat your air fryer to 350°F (175°C) for a few minutes.
- In a large bowl, break up any clumps of cold rice with your fingers or a fork to separate the grains.
- Heat oil in a skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
- Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are slightly softened.
- Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Allow the eggs to cook for a minute or so until they begin to set, then scramble them with a spatula until they are fully cooked.
- Add the cooked rice to the skillet and mix everything together. Cook for another 2-3 minutes until the rice is heated through and starting to crisp up slightly.
- Drizzle soy sauce over the rice and vegetables, and toss everything together until the soy sauce is evenly distributed. Season with salt and pepper to taste.
- Transfer the fried rice mixture to the air fryer basket or tray. Spread it out in an even layer.
- Air fry the rice at 350°F (175°C) for about 8-10 minutes, shaking the basket or stirring the rice halfway through cooking, until the rice is crispy and golden brown.
- Once done, remove the fried rice from the air fryer and garnish with chopped green onions and sesame seeds if desired.
- Serve hot and enjoy your delicious air fryer fried rice!
