Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of one lemon
- 1 tablespoon lemon juice
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat your air fryer to 325°F (160°C).
- In a mixing bowl, cream together the softened butter and sugar until it’s light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the lemon zest and lemon juice, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the blueberries.
- Grease a loaf pan that fits inside your air fryer basket and pour the batter into it.
- Place the loaf pan in the preheated air fryer basket and set the timer for 35-40 minutes.
- Check for doneness by inserting a toothpick into the center of the bread. If it comes out clean, the bread is ready. If not, continue to cook in 5-minute increments until done.
- Once the bread is done, remove it from the air fryer and allow it to cool in the pan for about 10 minutes.
- Carefully remove the bread from the pan and let it cool completely on a wire rack.
