Apple Cinnamon Coffee Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Apple Filling:

  • 2 medium-sized apples, peeled, cored, and finely chopped
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. Make the Apple Filling: In a small bowl, combine the chopped apples, brown sugar, and cinnamon. Set aside.
  3. Make the Streusel Topping: In another bowl, mix together the flour, brown sugar, and cinnamon for the streusel topping. Add the cold, cubed butter, and use your fingers or a pastry cutter to incorporate the butter until the mixture resembles coarse crumbs. Set aside.
  4. Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients, mixing just until combined.
  5. Assemble the Cake: Spread half of the cake batter into the prepared baking pan. Sprinkle the apple filling evenly over the batter. Spoon the remaining batter over the apples and spread it out as evenly as possible. Finally, sprinkle the streusel topping over the top.
  6. Bake: Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean. The baking time may vary, so start checking for doneness around 40 minutes.
  7. Cool and Serve: Allow the coffee cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Once cooled, you can cut it into squares and enjoy!
