Baked Cottage Cheese Eggs

Baked Cottage Cheese Eggs

Ingredients:

  • 4 large eggs
  • 1/2 cup cottage cheese (full-fat or low-fat, depending on preference)
  • 1/4 cup shredded cheese (optional, like cheddar or mozzarella)
  • 1 tablespoon butter or olive oil (for greasing the baking dish)
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • Fresh herbs (like chives, parsley, or basil), for garnish (optional)

Optional Add-ins:

  • Sautéed spinach or other greens
  • Chopped vegetables (such as bell peppers, tomatoes, or mushrooms)
  • Cooked bacon or sausage
  • Crumbled feta cheese

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Baking Dish: Grease a small baking dish (about 8×8 inches or individual ramekins) with butter or olive oil.
  3. Mix the Cottage Cheese and Eggs:
    • In a medium bowl, whisk together the eggs and cottage cheese until well combined. The cottage cheese will add a creamy texture to the eggs.
    • Season with salt, pepper, and garlic powder (if using). You can also add any other spices you like, such as paprika, onion powder, or herbs.
  4. Pour the Mixture into the Dish: Pour the egg and cottage cheese mixture into the prepared baking dish. If you’re adding optional ingredients like vegetables, bacon, or herbs, mix them in now.
  5. Top with Cheese (Optional): If you’re using shredded cheese, sprinkle it on top of the egg mixture.
  6. Bake: Place the dish in the preheated oven and bake for about 20-25 minutes, or until the eggs are set and lightly golden on top. If you like a slightly creamier texture, you can bake for a shorter time, but be careful not to overcook.
  7. Garnish and Serve: Once done, remove from the oven and let it cool for a couple of minutes. Garnish with fresh herbs if desired and serve hot.

Tips:

  • Texture: For a creamier consistency, you can blend the cottage cheese and eggs together before pouring them into the baking dish. This will create a smoother, more uniform texture.
  • Make it a Meal: Pair this with a side of fresh fruit, a slice of whole-grain toast, or a simple salad for a balanced meal.
  • Meal Prep: This dish stores well in the refrigerator for a few days, so you can make it ahead and reheat individual portions as needed.
