Banana Bread or Muffins

Ingredients:

For Banana Bread/Muffins:

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 cup chopped nuts (such as walnuts or pecans)

Instructions:

For Banana Bread:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
  2. Mash the Bananas:
    • In a mixing bowl, mash the ripe bananas with a fork.
  3. Combine Wet Ingredients:
    • Melt the butter in a microwave-safe bowl. Add the melted butter to the mashed bananas and mix well.
  4. Add Baking Soda and Salt:
    • Mix in the baking soda and a pinch of salt.
  5. Add Sugar, Egg, and Vanilla:
    • Stir in the sugar, beaten egg, and vanilla extract.
  6. Mix in Flour:
    • Gradually add the flour and mix until just incorporated. Do not overmix.
  7. Optional: Add Nuts:
    • If you’re using nuts, fold them into the batter.
  8. Pour into Loaf Pan:
    • Pour the batter into the greased loaf pan.
  9. Bake:
    • Bake in the preheated oven for about 60-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Cool and Serve:
  • Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

For Banana Muffins:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Mash the Bananas:
    • In a mixing bowl, mash the ripe bananas with a fork.
  3. Combine Wet Ingredients:
    • Melt the butter in a microwave-safe bowl. Add the melted butter to the mashed bananas and mix well.
  4. Add Baking Soda and Salt:
    • Mix in the baking soda and a pinch of salt.
  5. Add Sugar, Egg, and Vanilla:
    • Stir in the sugar, beaten egg, and vanilla extract.
  6. Mix in Flour:
    • Gradually add the flour and mix until just incorporated. Do not overmix.
  7. Optional: Add Nuts:
    • If you’re using nuts, fold them into the batter.
  8. Fill Muffin Cups:
    • Spoon the batter into the lined muffin cups, filling each about 2/3 full.
  9. Bake:
    • Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
  10. Cool and Serve:
  • Allow the muffins to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely.

Both the Banana Bread and Banana Muffins are best enjoyed warm with a pat of butter. Enjoy!
