Ingredients:

For the Filling:
  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 1 tablespoon pickles, finely chopped
  • 1 tablespoon yellow mustard
  • 2 tablespoons mayonnaise (light or reduced-fat)
  • 2 tablespoons ketchup
  • 1 cup shredded lettuce
  • 1 cup reduced-fat shredded cheddar cheese
  • Salt and pepper, to taste
Other Ingredients:
  • Egg roll wrappers (look for a lower-carb version if desired)
  • Cooking spray
  • Sesame seeds (optional, for garnish)
  • Big Mac sauce or additional ketchup and mustard for dipping

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Ground Beef:
    • In a skillet over medium heat, cook the lean ground beef until browned. Drain any excess fat.
  3. Add Onion and Pickles:
    • Add finely chopped onion and pickles to the cooked ground beef. Cook for an additional 2-3 minutes until the onions are softened.
  4. Make Big Mac Sauce:
    • In a small bowl, mix together yellow mustard, mayonnaise, and ketchup to create a Big Mac-style sauce. Adjust quantities to taste.
  5. Combine Filling Ingredients:
    • In a large bowl, combine the cooked beef mixture with shredded lettuce, cheddar cheese, and the Big Mac sauce. Season with salt and pepper to taste.
  6. Assemble Egg Rolls:
    • Lay out an egg roll wrapper and place a spoonful of the filling in the center. Fold the sides of the wrapper over the filling and roll it tightly, sealing the edges with a little water.
  7. Bake:
    • Place the assembled egg rolls on a baking sheet lined with parchment paper. Lightly spray the tops with cooking spray. Bake for about 15-20 minutes or until golden and crispy.
  8. Optional Garnish:
    • If desired, sprinkle sesame seeds over the egg rolls for added texture.
  9. Serve:
    • Serve the Big Mac Egg Rolls hot with a side of Big Mac sauce or additional ketchup and mustard for dipping.
