Blueberry Yogurt Protein Bars

Ingredients:

  • 2 cups old-fashioned oats
  • 1 cup vanilla protein powder
  • 1/2 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 teaspoon salt
  • 1 cup plain Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking dish (8×8 inches) with parchment paper, leaving some overhang on the sides for easy removal.
  2. Mix Dry Ingredients:
    • In a large bowl, combine oats, vanilla protein powder, almond flour, shredded coconut, and salt. Mix well.
  3. Combine Wet Ingredients:
    • In another bowl, whisk together Greek yogurt, honey or maple syrup, eggs, and vanilla extract until smooth.
  4. Combine Wet and Dry Mixtures:
    • Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Fold in Blueberries:
    • Gently fold in the blueberries until evenly distributed in the batter.
  6. Transfer to Baking Dish:
    • Transfer the mixture to the prepared baking dish, spreading it out evenly.
  7. Bake:
    • Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Cool:
    • Allow the bars to cool completely in the baking dish.
  9. Cut into Bars:
    • Once cooled, lift the parchment paper to remove the bars from the dish. Place on a cutting board and cut into bars of your desired size.
  10. Store:
    • Store the Blueberry Yogurt Protein Bars in an airtight container in the refrigerator for freshness.
