Ingredients
- 4 small crowns broccoli (about 3 cups, chopped)

- 1/2 teaspoon garlic powder

Instructions
Step 1: Prepare the Broccoli
- Steam or blanch the broccoli crowns until just tender, about 3–4 minutes.
- Drain the broccoli and chop it into small pieces. You can use a food processor for a finer texture, but make sure not to over-process.
- Place the chopped broccoli in a clean kitchen towel or paper towels to remove any excess moisture.
Step 2: Make the Fritter Mixture
- In a large bowl, combine the beaten eggs, all-purpose flour, mozzarella cheese, feta cheese, garlic powder, salt, and pepper.
- Stir in the chopped broccoli and mix everything together until well combined. The mixture should be thick enough to hold its shape when scooped.
Step 3: Cook the Fritters
- Heat olive oil in a large skillet over medium heat.
- Using a spoon or ice cream scoop, drop spoonfuls of the fritter mixture into the skillet. Flatten them slightly with the back of the spoon to form patties.
