Cabbage Rolls

Ingredients

  • For the Cabbage Rolls:
    • 1 large head of cabbage
    • 1 pound ground beef (or ground turkey)
    • 1 cup cauliflower rice
    • 1 small onion, finely chopped
    • 1 clove garlic, minced
    • 1 large egg
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon paprika
    • 1 teaspoon dried oregano
  • For the Tomato Sauce:
    • 1 can (15 oz) crushed tomatoes
    • 1/2 cup beef broth (or vegetable broth)
    • 1 tablespoon olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and pepper to taste
    • 1 teaspoon dried basil (optional)
    • 1 teaspoon dried parsley (optional)

Instructions

  1. Prepare the Cabbage:
    • Bring a large pot of water to a boil. Carefully peel off about 10-12 outer cabbage leaves, being mindful not to tear them.
    • Place the cabbage leaves in the boiling water and blanch for 3-4 minutes until softened. Remove and drain on a paper towel, then set aside to cool.
  2. Make the Filling:
    • In a large mixing bowl, combine the ground beef, cauliflower rice, chopped onion, minced garlic, egg, salt, pepper, paprika, and oregano. Mix until well combined.
  3. Assemble the Cabbage Rolls:
    • Place one cabbage leaf on a flat surface. Add about 2-3 tablespoons of the filling mixture to the center of the leaf.
    • Fold in the sides of the cabbage leaf, then roll from the bottom up to enclose the filling. Repeat with the remaining leaves and filling.
  4. Prepare the Tomato Sauce:
    • In a medium saucepan, combine the crushed tomatoes, beef broth, olive oil, garlic powder, onion powder, salt, pepper, and optional dried herbs. Simmer over medium heat for about 5 minutes, stirring occasionally.
  5. Bake the Cabbage Rolls:
    • Preheat your oven to 375°F (190°C). Spread a thin layer of tomato sauce on the bottom of a baking dish.
    • Place the cabbage rolls in the dish, seam-side down. Pour the remaining sauce over the cabbage rolls, ensuring they are fully covered.
    • Cover the dish with foil and bake for 45-50 minutes, or until the cabbage is tender and the filling is cooked through.
  6. Serve:
    • Carefully remove the cabbage rolls from the baking dish and serve hot, spooning extra sauce over the top. Garnish with fresh parsley if desired.
