Carnivore Cannoli
✨ Recipe Ingredients
To make this delicious carnivore cannoli you will need:
10 teaspoons (50g) Milk Protein Powder
1 Egg (large)
1/2 teaspoon Beef Gelatin
1/2 teaspoon Baking Powder
1/4 teaspoon Cream of Tartar
1/8 teaspoon Baking Soda
10.5oz (300g) Ricotta Cheese
1.4 oz (40g) unsalted Butter
1 1/4 teaspoons Vanilla Extract
You will also need – a sifter, hand mixer, pizzelle maker, fine mesh strainer, and icing piping bag.

Follow this recipe:
Step 1
Strain the ricotta cheese: place it in a cheesecloth-covered strainer over a bowl. Cover with plastic wrap and let it drain overnight in the refrigerator.
Step 2
Combine the milk protein powder, cream of tartar, and baking soda in a sifter.
Step 3
Using a hand mixer, mix 3.5oz (100g) of ricotta cheese with the butter until the mixture is smooth (it should take about 1-2 minutes). Then, add one egg and use the hand mixer to combine.
Step 4
Add the baking powder and beef gelatin. Use the hand mixer to mix and combine everything again. Use the sifter to add the mixed powder from step 2. Mix with a spatula.
Step 5
Preheat the pizzelle maker. Grab about 1 heaping tablespoon of dough, place it in the pizzelle maker for about one minute until it’s ready and browned. Repeat for the rest of the dough. Wrap and roll them into a cannoli shape.
Step 6
To make the filling, combine the strained ricotta cheese with the vanilla extract and mix well. Assemble the piping bag and fill it with the filling we made. Fill the rolled pizzelles with it. Enjoy!

2. Preheat the Pizzelle Maker and Cook Until Browned
To get perfectly crispy and evenly cooked cannoli shells, it’s important to preheat your pizzelle maker before adding the dough. Most pizzelle makers have a light that indicates when the machine is preheated and ready to use. Wait until this light turns on before adding your first spoonful of dough.
When adding the dough to the pizzelle maker, use about 1 heaping tablespoon of dough per cannoli shell. Place the dough in the center of the pizzelle maker and close the lid. Cook the cannoli shell for about one minute, or until it is browned and crispy.
