Carnivore Chicken Nuggets

Recipe Ingredients
1 pound Chicken Breasts (cut into 1 inch chunks)
1 cup Crushed Pork Rinds (use these pork rinds – amazon link)
2 large Eggs (beaten)
1 teaspoon Salt (or less if using salted pork rinds)
Black Pepper (to taste)
Optional (if not following a strict carnivore diet):

3/4 teaspoon Smoked Paprika
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder

Step 1

Crush the pork rinds in a food processor and pour them into a shallow bowl. Add the seasonings and mix well.

Step 2

In another shallow bowl, beat the eggs.

Step 3

Dip each piece of chicken in the egg mixture, and then coat it with the pork rind mixture. Toss and make sure the chicken pieces are well coated. You can repeat the process for a double coating.

Step 4

Set the coated chicken nuggets aside on a plate.

Preheat the oven to 425°F (220°C). Bake the nuggets for about 15 minutes or until crispy. Flip halfway through cooking. The cooking time may vary depending on your oven, so keep an eye on them to avoid overcooking. Enjoy your homemade chicken nuggets!

1. Double-coat the chicken for extra crispiness
If you’re looking for an even crunchier texture, try double-coating your chicken nuggets. After dipping each piece of chicken in the egg mixture and coating it with the pork rind mixture, repeat the process a second time.

This extra layer of coating will create a thicker, crispier exterior that will make your nuggets even more satisfying to bite into.

2. Use a wire rack
To ensure that your chicken nuggets cook evenly and maintain their crispy texture, consider using a wire rack placed on top of a baking sheet. This allows hot air to circulate around the nuggets, preventing them from becoming soggy on the bottom.

If you don’t have a wire rack, you can still achieve good results by flipping the nuggets halfway through the cooking time to ensure even browning on both sides.
