Carnivore Cloud Bread
Ingredients:
- 4 large eggs
- 2 oz (60g) cream cheese (softened)
- 1 tbsp grass-fed ghee or butter (melted)
- 1/2 tsp sea salt
- 1/4 tsp baking powder (optional, for fluffiness – omit for stricter carnivore)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 300°F (150°C).
- Line a baking sheet with parchment paper or grease it with ghee or butter.
2. Separate the Eggs:
- Separate the egg whites and egg yolks into two different bowls.
- Be careful not to get any egg yolk in the whites.
3. Whip the Egg Whites:
- Using a hand mixer or stand mixer, whip the egg whites on high speed until they form stiff peaks. This should take about 3–5 minutes. The whites should stand tall when the beaters are removed.
4. Mix the Egg Yolks:
- In another bowl, whisk together the egg yolks, cream cheese, melted ghee or butter, and sea salt until smooth and well combined.
5. Fold the Mixtures Together:
- Gently fold the whipped egg whites into the egg yolk mixture. Use a spatula to carefully combine, being cautious not to deflate the egg whites. The mixture should stay fluffy and airy.
6. Shape the Cloud Bread:
- Spoon the mixture onto the prepared baking sheet in small round portions, about the size of a bun or a small pancake (roughly 4–5 small circles). Use the back of the spoon to gently spread and flatten them out a bit.
7. Bake:
- Bake in the preheated oven for 25–30 minutes, or until the cloud bread is golden brown on top and firm to the touch.
8. Cool and Serve:
- Let the cloud bread cool for a few minutes before carefully removing it from the baking sheet. Serve immediately or store in an airtight container in the fridge for up to 3 days.
Pro Tips:
- Fluffiness: Make sure to whip the egg whites to stiff peaks to achieve a fluffy texture.
- Texture Adjustments: If you prefer a slightly firmer bread, you can add a tiny bit of psyllium husk powder (optional and not strictly carnivore).
- Storage: Store cloud bread in the fridge for up to 3 days. Reheat it in a skillet with a little butter for extra flavor and crispness.
This Carnivore Cloud Bread is perfect for those following a strict carnivore diet who miss the texture of bread. It’s great for sandwiches, burgers, or just enjoying on its own with butter. Enjoy! 🍞🧈
