Carnivore Creamy Sausage Soup

Recipe Ingredients
1 pound Ground Italian sausage
1/4 cup Heavy Whipping Cream
One carton of Chicken Broth
1 tablespoon Butter
1 teaspoon Garlic powder (omit for strict carnivore)
1 teaspoon Italian Seasoning (omit for strict carnivore)
Crumbled Bacon (to add on top)
pinch of Salt
pinch of Black Pepper
Note: I garnish with coriander on top, but you can omit for a strict carnivore recipe.

Step 1

Brown the ground Italian sausage in a pan over medium-high heat with butter.

Step 2

Add salt, black pepper, garlic powder, and Italian seasoning (if using). Mix well.

Step 3

Pour in the chicken broth and simmer for about 10 minutes on medium heat.

Step 4

Stir in the heavy whipping cream and cook for about a minute, mixing well.

1. Adjust the Consistency
If you like a thicker soup, you can let it simmer for a bit longer to reduce and concentrate the flavors. Alternatively, you could add a bit more cream. If you prefer a thinner soup, you can add more broth.

Remember that the soup will thicken slightly as it cools, so it’s often best to err on the side of a little too thin while it’s still hot. You can always adjust the thickness later by adding more cream or simmering it down.

2.Experiment with Toppings
While the recipe suggests crumbled bacon as a topping, don’t be afraid to get creative with other carnivore-friendly additions.

Crispy pork rinds can add a nice crunch. You could also try crumbling some hard cheese on top, like aged cheddar or parmesan, if you tolerate dairy well. Another option is to fry up some additional sausage until it’s extra crispy and use that as a topping.

If you’re not strictly following a carnivore diet, you could consider adding some finely chopped fresh herbs like parsley or chives for a pop of color and flavor.
