Carnivore Egg Custard

This rich and creamy egg custard is made entirely with animal-based ingredients, making it a perfect dessert for those following a strict carnivore diet. It’s satisfying, nutrient-dense, and easy to prepare!

Ingredients:

  • 6 large egg yolks
  • 2 cups heavy cream (preferably grass-fed, full-fat)
  • 1/2 tsp sea salt (optional, for a subtle flavor boost)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 325°F (160°C).
  • Prepare a deep baking dish or roasting pan to create a water bath. Place 4–6 small ramekins inside the dish.

2. Heat the Cream:

  • In a small saucepan, heat the heavy cream over medium heat until it’s hot but not boiling. You’ll see steam rising, and small bubbles will form around the edges. Remove from heat and let it cool slightly.

3. Whisk the Egg Yolks:

  • In a mixing bowl, whisk the egg yolks until smooth. If using sea salt, add it now.

4. Temper the Egg Yolks:

  • Slowly pour a small amount of the warm cream into the egg yolks while whisking constantly. This step prevents the yolks from cooking.
  • Gradually add the remaining cream to the yolks, whisking until fully combined.

5. Pour into Ramekins:

  • Strain the custard mixture through a fine mesh sieve into the ramekins. This ensures a silky-smooth texture.

6. Create a Water Bath:

  • Pour hot water into the baking dish, filling it until the water reaches halfway up the sides of the ramekins. Be careful not to splash water into the custard.

7. Bake the Custard:

  • Bake in the preheated oven for 30–35 minutes, or until the custards are set but still slightly jiggly in the center.
  • Remove the ramekins from the water bath and let them cool at room temperature for about 10 minutes.

8. Chill (Optional):

  • For a chilled custard, cover the ramekins and refrigerate for at least 1 hour before serving.

Optional Carnivore Toppings:

  • Crispy bacon bits for a sweet-savory twist
  • Whipped cream made from heavy cream (unsweetened)
  • Melted butter or ghee drizzled on top

Pro Tips:

  • Fresh Ingredients: Use the freshest eggs and cream for the best flavor and texture.
  • Storage: Store leftover custards in the fridge for up to 3 days. Serve chilled or gently reheat in a water bath.
  • Flavor Variations: For variety, add a splash of eggnog-seasoned broth (strictly carnivore-friendly) or beef tallow for extra richness.

This Carnivore Egg Custard is an indulgent, creamy dessert or snack that fits perfectly into a carnivore lifestyle. Enjoy its silky texture and rich flavor! 🥚🍮
