5 oz (140g) Pork Rinds
2 Eggs
10 pieces of string Mozzarella Cheese
1 teaspoon Italian Seasoning
Tallow for frying
Step 1
Heat the oil in a pan to around 370°F (188°C). Meanwhile, cut the string cheese in half to create 20 short pieces.
Step 2
Blend the pork rinds in a food processor until they are finely crushed. Add the seasonings and mix well.
Step 3
In a separate bowl, whisk the eggs thoroughly.
Step 4
Dip each cheese stick in the whisked eggs, making sure they are well coated. Then, transfer them to the pork rind mixture, ensuring they are completely coated. Dip the coated cheese sticks back into the whisked eggs for a second coating, and then return them to the pork rind mixture for a final coating.
Step 5
Place a few coated cheese sticks in the pot with the hot oil and fry for about 1 minute. If you notice any sign of cheese leaking, remove them from the oil immediately. Repeat the frying process for all the cheese sticks. Enjoy your crispy, cheesy snacks!
💡Tips
1. Double Coating for Extra Crispiness
To achieve an extra crispy exterior and prevent the cheese from leaking out during frying, it’s important to double coat the mozzarella sticks. After the first coating of egg wash and pork rind mixture, dip the cheese sticks back into the egg wash and then return them to the pork rind mixture for a second coating.
This double coating creates a thicker, more stable barrier that will help keep the cheese contained and result in a satisfyingly crunchy texture when fried.
2. Perfecting the Pork Rind Coating
To achieve the perfect pork rind coating, use a food processor to crush the pork rinds into a fine, uniform consistency. This will ensure that the coating adheres evenly to the cheese sticks and creates a crispy exterior when fried.
If you don’t have a food processor, you can place the pork rinds in a resealable plastic bag and crush them using a rolling pin or a heavy object.
