Ingredients:
2 large zucchinis, spiralized into noodles
1 pound peeled shrimp, tails removed.
3 cups chopped fresh spinach.
1 Tbsp. minced garlic
2 Tbsp. butter
1 cup heavy cream
1 cup shredded mozzarella.
2 tsp. olive oil.
Instructions:
Spiralize the zucchinis into noodles and set them aside.
In a large sauté pan, drizzle olive oil and add the minced garlic. Cook until fragrant.
Add the shrimp to the pan and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the cooked shrimp and set them aside.
In the same pan, add the butter and chopped spinach. Sauté the spinach until it wilts and becomes tender.
Return the cooked shrimp to the pan and toss everything together.
Add the zucchini noodles to the shrimp and spinach mixture. Sauté for about 2-3 minutes until the zucchini noodles are tender but not overcooked.
In a small saucepan, add the heavy cream and bring it to a gentle simmer.
Add the mozzarella cheese to the cream and stir until all the cheese is melted, creating a creamy sauce.
Pour the cheese sauce over the zucchini noodle, shrimp, and spinach mixture. Toss to combine and heat through.
