Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 packages (8 oz each) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups whipped cream or whipped topping
- Fruit compote or fresh berries for layering
- Additional graham cracker crumbs for garnish (optional)
Instructions:
Graham Cracker Crust:
- In a bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
- Press a layer of the graham cracker mixture into the bottom of serving glasses or jars to create the crust.
Cheesecake Filling:
- In a separate bowl, beat the cream cheese until smooth.
- Add the powdered sugar and vanilla extract to the cream cheese. Continue to beat until well combined.
- Gently fold in the whipped cream or whipped topping until the mixture is light and fluffy.
Assembling the Parfaits:
- Spoon a layer of the cheesecake filling over the graham cracker crust in each glass.
- Add a layer of fruit compote or fresh berries on top of the cheesecake filling.
- Repeat the layers, ending with a dollop of the cheesecake mixture on the top.
- Optionally, garnish with additional graham cracker crumbs or a berry on top.
- Refrigerate the parfaits for at least 2 hours to allow them to set.
