cheesecake parfaits

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whipped cream or whipped topping
  • Fruit compote or fresh berries for layering
  • Additional graham cracker crumbs for garnish (optional)

Instructions:

Graham Cracker Crust:

  1. In a bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
  2. Press a layer of the graham cracker mixture into the bottom of serving glasses or jars to create the crust.

Cheesecake Filling:

  1. In a separate bowl, beat the cream cheese until smooth.
  2. Add the powdered sugar and vanilla extract to the cream cheese. Continue to beat until well combined.
  3. Gently fold in the whipped cream or whipped topping until the mixture is light and fluffy.

Assembling the Parfaits:

  1. Spoon a layer of the cheesecake filling over the graham cracker crust in each glass.
  2. Add a layer of fruit compote or fresh berries on top of the cheesecake filling.
  3. Repeat the layers, ending with a dollop of the cheesecake mixture on the top.
  4. Optionally, garnish with additional graham cracker crumbs or a berry on top.
  5. Refrigerate the parfaits for at least 2 hours to allow them to set.
  6. Serve chilled and enjoy your delicious cheesecake parfaits!
