Ingredients
- 2 lbs (900g) boneless, skinless chicken breasts (or thighs)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil
For the Spinach and Cheese Filling:
- 10 oz (280g) frozen spinach, thawed and drained (or fresh spinach, sautéed and drained)
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Chicken
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt, black pepper, garlic powder, and onion powder.
- Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken for 3–4 minutes per side until golden brown. The chicken doesn’t need to be fully cooked yet, as it will bake in the oven later. Remove the chicken from the skillet and set aside.
Step 2: Make the Spinach and Cheese Filling
- In a large bowl, combine the cream cheese, mozzarella cheese, Parmesan cheese, garlic powder, oregano, salt, and pepper.
- Stir in the thawed spinach, ensuring it’s well-mixed with the cheese mixture. If using fresh spinach, make sure to squeeze out any excess moisture before adding.
Step 3: Assemble the Bake
- Spread a generous amount of the spinach and cheese mixture over each piece of chicken in the skillet.
- Place the chicken back into the skillet, on top of the spinach mixture, or transfer the chicken and spinach mixture to a baking dish if needed.
Step 4: Bake the Chicken
- Bake the dish in the preheated oven for about 25–30 minutes or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C) and the cheese is melted and bubbly.
Step 5: Serve & Enjoy
