Ingredients:
2 cups cooked chicken, shredded or diced
1/2 cup mayonnaise
1/4 cup sour cream or Greek yogurt
1/2 cup celery, finely diced
1/2 cup red grapes, halved
1/4 cup slivered almonds or chopped pecans (optional)
1 tbsp Dijon mustard
1 tbsp fresh parsley, chopped
Salt and pepper, to taste
4-6 fresh croissants

Instructions:
Prepare the Chicken Salad
In a large mixing bowl, combine the shredded chicken, mayonnaise, and sour cream (or Greek yogurt). Mix well until the chicken is fully coated.
Add the Fresh Ingredients
Add the celery, red grapes, almonds or pecans, and Dijon mustard to the bowl. Gently fold everything together until well mixed.
