Chicken spinach and mushroom low carb oven dish

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme (optional)
  • 1 teaspoon dried oregano (optional)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Chicken:
    • Season the chicken breasts with salt and pepper.
  3. Sear Chicken:
    • In an oven-safe skillet, heat olive oil over medium-high heat. Add chicken breasts and sear for 2-3 minutes on each side until browned. Remove chicken from the skillet and set aside.
  4. Sauté Mushrooms and Garlic:
    • In the same skillet, add sliced mushrooms and minced garlic. Sauté for 3-4 minutes until mushrooms are tender.
  5. Add Spinach:
    • Add fresh spinach to the skillet and cook until wilted.
  6. Create Space for Chicken:
    • Push the vegetables to the sides of the skillet, creating space in the center. Place the seared chicken breasts back into the skillet.
  7. Top with Cheese:
    • Sprinkle shredded mozzarella and grated Parmesan cheese over the chicken breasts and vegetables.
  8. Pour Chicken Broth:
    • Pour chicken broth into the skillet around the chicken.
  9. Season and Bake:
    • Season with dried thyme and oregano, if using. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  10. Garnish and Serve:
    • Garnish with chopped fresh parsley before serving.
