Crack Slaw (Egg Roll in a Bowl)

Ingredients:

  • 1 lb ground meat (beef, pork, turkey, chicken)
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon sugar or a sugar substitute
  • 1 small cabbage, thinly sliced
  • 1 large carrot, julienned
  • 4 green onions, sliced
  • Salt and pepper, to taste
  • Sesame seeds and chopped cilantro for garnish (optional)

Instructions:

  1. Brown the Meat:
    • In a large skillet or wok over medium-high heat, brown the ground meat in sesame oil and olive oil until fully cooked.
  2. Add Aromatics:
    • Add the chopped onion, minced garlic, and grated ginger to the skillet. Stir and cook for 2-3 minutes until the onion is softened.
  3. Make the Sauce:
    • In a small bowl, whisk together soy sauce, rice vinegar, Sriracha sauce, hoisin sauce (if using), and sugar. Pour the sauce over the meat and vegetables.
  4. Add Vegetables:
    • Toss in the sliced cabbage and julienned carrot. Stir well to combine all ingredients. Cook for an additional 5-7 minutes or until the vegetables are tender-crisp.
  5. Adjust Seasoning:
    • Season with salt and pepper to taste. Adjust the soy sauce or Sriracha if needed.
  6. Finish and Serve:
    • Stir in sliced green onions and cook for an additional 1-2 minutes until they are just wilted. Remove from heat.
  7. Garnish and Serve:
    • Garnish with sesame seeds and chopped cilantro if desired. Serve hot.
