Quick cheap and no draining needed!
I made it with more veg than pasta as I’m trying to lose weight.
*Sauté (until soft and browned)
Leeks
Carrot
Celery
Mushrooms
Garlic
*Add stock to cover and add desired amount of Pasta cook for 10 mins.
*Add greens I had Broccoli,Kale, Cavalo Nero but whatever you have! Cook until pasta is to your taste.
*Add in coconut cream and Dijon mustard warm but don’t heat too high or the coconut disappears!
*seasoned with black pepper chilli flakes.
