Ingredients:
- 1 pound of pasta (linguine or fettuccine works well)
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 4 cloves of garlic, minced
- 1 can of coconut milk
- 1/4 cup of nutritional yeast
- 1 teaspoon of dried basil
- Salt and pepper to taste
- 1 cup of chopped vegetables (e.g. mushrooms, spinach, broccoli, zucchini)
Instructions:
- Cook the pasta according to the instructions on the package, then drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until they start to soften.
- Add the chopped vegetables to the pan and sauté for 5-7 minutes until they are cooked through.
- Pour in the can of coconut milk, nutritional yeast, dried basil, salt, and pepper. Stir to combine and let simmer for 5-7 minutes until the sauce has thickened.
- Add the cooked pasta to the pan with the sauce and vegetables. Stir to coat the pasta with the sauce and let simmer for another 2-3 minutes.
- Serve the pasta hot and enjoy your creamy and delicious vegan meal!
