Creamy Veg Pasta!

Ingredients:

  • 1 pound of pasta (linguine or fettuccine works well)
  • 2 tablespoons of olive oil
  • 1 onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 can of coconut milk
  • 1/4 cup of nutritional yeast
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • 1 cup of chopped vegetables (e.g. mushrooms, spinach, broccoli, zucchini)

Instructions:

  1. Cook the pasta according to the instructions on the package, then drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until they start to soften.
  3. Add the chopped vegetables to the pan and sauté for 5-7 minutes until they are cooked through.
  4. Pour in the can of coconut milk, nutritional yeast, dried basil, salt, and pepper. Stir to combine and let simmer for 5-7 minutes until the sauce has thickened.
  5. Add the cooked pasta to the pan with the sauce and vegetables. Stir to coat the pasta with the sauce and let simmer for another 2-3 minutes.
  6. Serve the pasta hot and enjoy your creamy and delicious vegan meal!
