Crispy Broccoli Cheese Bites Recipe

Ingredients:

  • 2 cups fresh broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • ½ cup almond flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • 2 tbsp olive oil (if pan-frying)

Instructions:

  1. Prepare the Broccoli:
    • Steam the broccoli florets for about 5 minutes until tender. Allow them to cool slightly, then finely chop. Alternatively, use a food processor to pulse them into small pieces.

 

  1. Mix the Ingredients:
    • In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, egg, almond flour, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Mix until well combined.
  2. Form the Bites:
    • Using your hands, form the mixture into small bite-sized balls or patties, about 1 inch in diameter. If the mixture feels too wet, add a bit more almond flour.
  3. Cook the Bites:
    • Oven Method: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the broccoli cheese bites on the sheet and bake for 18-20 minutes, or until golden brown and crispy.
    • Pan-Frying Method: Heat olive oil in a non-stick skillet over medium heat. Cook the broccoli cheese bites for 3-4 minutes on each side, or until crispy and golden brown.
  4. Serve:
    • Allow the bites to cool slightly before serving. They can be enjoyed on their own or with a dipping sauce like ranch, marinara, or a spicy aioli.
