  • 1/2 cup pork rinds, crushed (optional for extra crunch)
  • 1/4 cup avocado oil or coconut oil (for frying)

Instructions:

  1. Prepare the Coating: In a shallow bowl, combine the almond flour, parmesan cheese (if using), paprika, garlic powder, onion powder, black pepper, and salt. Mix well.
  2. Prepare the Egg Wash: In another shallow bowl, whisk the eggs and heavy cream (if using) until well combined.
  3. Coat the Chicken: Dip each chicken strip into the egg wash, allowing any excess to drip off. Then, coat it thoroughly with the almond flour mixture. For extra crunch, you can press the crushed pork rinds onto the chicken strips after coating them in the almond flour mixture.
  4. Heat the Oil: Heat the avocado oil or coconut oil in a large skillet over medium-high heat. You’ll want enough oil to cover the bottom of the pan, but not fully submerge the chicken.
