Ingredients

  • 1 large cucumber, thinly sliced or diced
  • 2 ripe avocados, diced
  • 1/4 red onion, thinly sliced
  • 2 tbsp fresh dill or cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Optional: 1 cup cherry tomatoes, halved

 

Instructions

  1. Prepare the vegetables: In a large bowl, combine the sliced cucumber, diced avocados, and red onion. If using, add the halved cherry tomatoes.
