Double Chocolate Chip Muffins

Ingredients:

  • 1 and 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips (plus extra for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  5. Fold in the chocolate chips.
  6. Spoon the batter into the muffin cups, filling each about 2/3 full.
  7. If desired, sprinkle a few additional chocolate chips on top of each muffin.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
