Egg Roll in a Bowl Keto

Egg Roll in a Bowl Keto

Egg Roll in a Bowl is a fantastic, easy, and low-carb meal that’s full of flavor—just like your favorite egg rolls, minus the wrapper! Here’s a simple Keto Egg Roll in a Bowl recipe:

Ingredients:

  • 1 lb ground pork (or ground turkey/chicken)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 2 tbsp coconut aminos (or soy sauce, but coconut aminos is keto-friendly)
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp sesame oil
  • 1 tbsp ginger, freshly grated (or 1 tsp ground ginger)
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2-3 green onions, sliced (for garnish)
  • 1 tbsp sesame seeds (optional, for garnish)

Instructions:

  1. Cook the Ground Pork:
In a large skillet or wok, heat a little bit of oil over medium heat. Add the ground pork and cook, breaking it apart with a spoon, until it’s browned and cooked through (about 6-8 minutes). Drain any excess fat if necessary, and set aside.
  2. Sauté the Aromatics:
In the same skillet, add sesame oil. Once hot, sauté the chopped onion and garlic for about 2 minutes, until fragrant and softened.
  3. Add the Ginger and Coleslaw Mix:
Add the grated ginger (or ground ginger) to the skillet and cook for about 30 seconds. Then, toss in the coleslaw mix (shredded cabbage and carrots) and stir to combine. Cook for about 3-5 minutes, or until the cabbage softens, but still has some crunch.
  4. Combine and Season:
Add the cooked ground pork back into the skillet. Stir in the coconut aminos (or soy sauce), rice vinegar, red pepper flakes (optional), salt, and black pepper. Cook for another 2 minutes, stirring everything together.
  5. Garnish and Serve:
Once everything is well combined and heated through, remove from heat. Garnish with sliced green onions and sesame seeds if desired.

Serve:

Serve hot and enjoy your Keto Egg Roll in a Bowl! It’s perfect on its own or with a side of cauliflower rice for an even heartier meal.

This dish is savory, satisfying, and a great low-carb alternative to traditional egg rolls!
