Ingredients:

 

  • 1/2 cup chopped sugar-free chocolate or dark chocolate (at least 85% cocoa)
  • 1/2 cup chopped nuts (such as almonds, pecans, or walnuts)

Instructions:

    1. Line a baking sheet with parchment paper or a silicone baking mat.
    2. In a saucepan over medium heat, melt the butter. Once melted, add the powdered sweetener and salt, stirring continuously until the sweetener is dissolved and the mixture begins to bubble.
    3. Continue cooking and stirring frequently until the mixture thickens and turns a deep golden brown color. This can take about 10-15 minutes.
    4. Remove the saucepan from the heat and quickly stir in the vanilla extract.
    5. Pour the hot toffee mixture onto the prepared baking sheet, spreading it out into an even layer with a spatula.

 

  1. Sprinkle the chopped chocolate evenly over the hot toffee. Let it sit for a minute or two until the chocolate starts to melt, then spread the melted chocolate evenly over the toffee.
  2. Sprinkle the chopped nuts over the melted chocolate, gently pressing them into the surface.
  3. Place the baking sheet in the refrigerator for at least 1-2 hours, or until the toffee is completely set.
  4. Once set, break the toffee into pieces and store in an airtight container in the refrigerator.
