fantastic garlic flatbreads
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup plain yogurt
- 1/2 cup water (approximately)
- 2 tablespoons olive oil
- 3-4 cloves garlic, minced
- 2 tablespoons chopped fresh parsley (optional)
- Butter or olive oil for brushing

Instructions:
- In a large mixing bowl, combine the flour, baking powder, and salt.
- Add the yogurt and olive oil to the flour mixture. Stir to combine.
- Slowly add water, a little at a time, until the dough comes together. You may not need to use all of the water.
- Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
- Divide the dough into 4 equal portions and shape each portion into a ball.
- On a lightly floured surface, roll out each ball of dough into a thin circle, about 1/8 inch thick.
- In a small bowl, mix together the minced garlic and chopped parsley.
- Heat a skillet or griddle over medium heat.
- Place one flatbread in the skillet and cook for about 2 minutes, until bubbles form on the surface and the bottom is lightly browned.
- Flip the flatbread and cook for an additional 1-2 minutes, until the other side is browned.
- Remove the flatbread from the skillet and brush with butter or olive oil.
- Sprinkle some of the garlic and parsley mixture over the top of the flatbread.
- Repeat with the remaining dough balls.
- Serve the garlic flatbreads warm, either on their own or as a side dish with your favorite meals.
