Fat-Burning Cucumber Salad

Ingredients:

  • 1 large cucumber, peeled, halved, and thinly sliced
  • 4 tomatoes, halved, and thinly sliced
  • 1 small red onion, peeled and sliced thin
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon sea salt
  • Pinch of raw sugar or a vegan sweetener of your choice

Instructions:

  1. In a large bowl, combine the sliced cucumber, tomatoes, red onion, and minced garlic.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, ground pepper, sea salt, and raw sugar (or your chosen vegan sweetener).
  3. Pour the dressing over the cucumber mixture and toss everything together until well coated.
  4. Allow the salad to marinate in the refrigerator for at least 30 minutes before serving.
