Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Prepare the foil packets: Cut four large pieces of aluminum foil, each large enough to wrap around one salmon fillet and some asparagus.
- Season the salmon: Place each salmon fillet in the center of a piece of foil. Season the fillets with salt and pepper to taste.
- Add asparagus: Arrange a handful of trimmed asparagus spears next to each salmon fillet.
- Make the garlic sauce: In a small bowl, mix together minced garlic, olive oil, lemon juice, dried oregano, and a pinch of salt.
- Drizzle sauce: Drizzle the garlic sauce over the salmon and asparagus. Ensure that each fillet and the asparagus are well-coated.
- Wrap the foil packets: Fold the sides of the foil over the salmon and asparagus, creating a packet. Seal the edges tightly to prevent the sauce from leaking.
- Bake in the oven: Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve: Carefully open the foil packets, being cautious of the hot steam. Transfer the salmon and asparagus to plates, drizzle with any remaining garlic sauce, and garnish with fresh parsley and lemon slices if desired.
