Fried Oyster Mushrooms and Jalapeño Grits

Ingredients
Oyster mushroom -2 cups
[ ] King Arthur’s-all purpose flour
[ ] Slutty vegan-Slut Dust All Purpose Seasoning or seasoning of your choice
[ ] 1 chopped/diced jalapeños
[ ] carbonated water, sparkling water, or seltzer water ( your choice)
[ ] Two mixing bowls
[ ] Neutral oil
Clean Oyster mushrooms
[ ] simply rinse mushrooms quickly with cold water, drain and pat with paper towel to remove excess water (set aside)
in BOTH medium size BOWLS add
[ ] 1 cup of flour
( I usually don’t measure)
[ ] add seasoning- your choice, I used Slutty vegan-Slut Dust All Purpose Seasoning – (let your ancestors guide you)
[ ] Stir seasoned flour mixture
[ ] Add carbonated water, sparkling water, or seltzer water (your choice) to Only 1 BOWL, I didn’t measure, pour a little at a time and stir until it’s similar to pancake batter
[ ] Add the remaining chopped/ diced jalapeño, to the wet batter, stir
[ ] Dip mushrooms in wet batter and then dry batter [I doubled batter for this recipe~ wet,dry, wet, dry]
[ ] Place in heated oil, cook until golden brown
Grits
[ ] Yellow stone-ground grits
* 4 1/2 cups water
* 1 teaspoon pink Himalayan salt
* 1 cup stone-ground grits
* 4 to 6 tablespoons vegan butter, cut into pieces
* Optional: freshly ground black pepper
* Cook on medium/low heat, stir, often, they can scorch easily.
When grits are done,stir in the remaining jalapeño and add butter.
