Garlic Butter Shrimp with Breadcrumbs

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste
  • 1 lemon, zested and juiced
  • 1/2 cup breadcrumbs (preferably panko for extra crunch)
  • 1/4 cup fresh parsley, chopped
  • Optional: grated Parmesan cheese

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Prepare the Shrimp: In a large mixing bowl, combine the shrimp with salt, pepper, and lemon juice. Toss well to coat.

  3. Make the Garlic Butter: In a skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1-2 minutes until fragrant (be careful not to burn the garlic).

  4. Combine Ingredients: In a large baking dish, arrange the shrimp in a single layer. Pour the garlic butter mixture over the shrimp. Add the lemon zest and mix gently.

  5. Add Breadcrumbs: In a small bowl, mix the breadcrumbs with a pinch of salt, pepper, and parsley (and Parmesan cheese if using). Sprinkle the breadcrumb mixture evenly over the shrimp.

  6. Bake: Bake in the preheated oven for about 15-20 minutes, or until the shrimp are pink and opaque, and the breadcrumbs are golden brown.

  7. Garnish and Serve: Remove from the oven. Garnish with additional chopped parsley and serve with lemon wedges on the side.
