
GARLIC FRIES + VEGAN CHIPOTLE AIOLI
Ingredients:
For Garlic Fries:
- 4 large potatoes, washed and cut into fries
- 4 cloves of garlic, minced
- 2-3 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
For Vegan Chipotle Aioli:
- 1/2 cup vegan mayonnaise
- 1 chipotle pepper in adobo sauce, minced
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt to taste
Instructions:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil.
- In a large bowl, toss the cut potatoes with minced garlic, olive oil, salt, and pepper until well coated.
- Spread the potato fries in a single layer on the prepared baking sheet, making sure they are not crowded. This helps them crisp up nicely.
- Bake in the preheated oven for about 25-30 minutes, or until the fries are golden brown and crispy, flipping them halfway through the baking time for even cooking.
- While the fries are baking, prepare the Vegan Chipotle Aioli. In a small bowl, mix together the vegan mayonnaise, minced chipotle pepper, minced garlic, lemon juice, and salt until well combined. Adjust seasoning to taste.
- Once the fries are done, remove them from the oven and let them cool slightly. Sprinkle with chopped parsley if desired.
- Serve the garlic fries hot with the vegan chipotle aioli on the side for dipping.
