INGREDIENTS:
500g chicken gizzard
1 ripe plantain
3 large fresh tomatoes
2 habenero pepper
1 red bell pepper
1 large onion bulb
1 garlic clove
1/2 tsp garlic
1/2 tsp curry
1/2 tsp thyme
2 stock cubes
Vegetable oil
GARNISH : The garnish makes the meal very enticing before tasting
1 green bell pepper
1 red bell pepper
1 small red onion
ALL CHOPPED INTO TINY CUBES
PROCEDURE:
Clean the gizzard by removing the yellow lining, then wash the gizzard with salted water or lemon juice
Scrub well to get rid of any dirt, then rinse the gizzard with running water, strain and set aside
You can cut the gizzard into smaller bite sizes
Place the cleaned gizzard into a pot, pour enough water to half the level of the gizzard
Season with half bulb onion, garlic, one stock cube, thyme, curry and salt to taste
Cook until tender and set aside
Cut the plantain in cubes and fry in hot vegetable oil until brown, transfer onto a sieve
Fry the gizzard in the same oil until brown and also transfer onto a sieve lined with paper towel to absorb excess oil
NB: FOR A HEALTHIER OPTION, GRILL THE GIZZARD IN THE OVEN UNTIL BROWN
Chop the onions and pepper (blend coarsely that is simply roughly)
Heat up some oil, add the chopped onion and fry a bit to get the flavor
Pour in the blended mix into the pot and fry for about 10-15 minutes or until the sour taste is lost
Then add one stock cube and salt to taste, simmer for 2 minutes and set aside
Add the fried gizzard to the sauce and simmer for about 2 minutes to soak in the sauce
Add the fried plantains, chopped onions, green and red peppers
Mix thoroughly and put off the heat
