Ingredients
2 Tbsp Extra Virgin Olive Oil
6 Cloves Garlic, Minced
2 Tsp Chili Powder
2 Tsp Cumin
½ Tsp Paprika
½ Tsp Oregano
½ Tsp Crushed Red Pepper Flakes
1 Red Onion, Chopped
1 Bell pepper, Chopped
2 Roma Tomatoes, Chopped
2 ½ Cups Baby Sweet White Corn, Fresh or Frozen
2 Cups Short Grain Brown Rice (3 to 4 Cups When Cooked)
2 Cups Black Beans
1 Whole Bunch Cilantro, Leaves Whole
1 ( oz) Can (Medium Heat) Fire Roasted Diced Green Chilies
Fresh Ground Salt & Black Pepper, To Taste
Instructions
Combine the oil and garlic in a large saucepan or wok.
Heat on low about 5 minutes, stirring occasionally. Add the chili powder, cumin, paprika, oregano and red pepper flakes and simmer and stir another 5 minutes.
Add the onion and pepper. Turn the heat up a bit and sauté for 5 minutes.
Add the tomato, diced green chilies and corn and sauté for another 5 minutes.
Add the brown rice and sauté 5 more minutes. Fold in the beans and cilantro. Add some black pepper, salt and any additional seasonings you like to taste.
