Healthy Chicken Fajita Soup

Ingredients:

For the Soup:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 3 bell peppers (red, yellow, and green), thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (14 oz) black beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For Garnish:

  • Fresh cilantro, chopped
  • Avocado slices
  • Lime wedges
  • Greek yogurt or low-fat sour cream

Instructions:

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced chicken and cook until browned. Remove chicken from the pot and set aside.
  2. In the same pot, add sliced onions and bell peppers. Sauté until softened.
  3. Add minced garlic and sauté for another 1-2 minutes until fragrant.
  4. Pour in diced tomatoes (with their juice) and black beans. Stir to combine.
  5. Return the cooked chicken to the pot.
  6. Add chicken broth, ground cumin, chili powder, smoked paprika, salt, and pepper. Stir well.
  7. Bring the soup to a simmer and let it cook for 15-20 minutes to allow the flavors to meld.
  8. Adjust seasoning according to your taste preferences.
  9. Ladle the soup into bowls.
  10. Garnish each bowl with fresh cilantro, avocado slices, a squeeze of lime, and a dollop of Greek yogurt or low-fat sour cream.
  11. Serve hot and enjoy your healthy chicken fajita soup!
