Healthy Key Lime Pie

Ingredients:

For the Crust:
  • 1 cup almond flour
  • 1/4 cup melted coconut oil
  • 2 tablespoons maple syrup or honey
  • Pinch of salt
For the Filling:
  • 1 can (14 ounces) reduced-fat sweetened condensed milk
  • 1/2 cup plain Greek yogurt
  • 1/2 cup fresh key lime juice (or regular lime juice)
  • 1 tablespoon lime zest
  • 2 large egg yolks
For the Topping (Optional):
  • 1 cup whipped coconut cream or whipped Greek yogurt

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Make the Crust:
    • In a bowl, combine almond flour, melted coconut oil, maple syrup or honey, and a pinch of salt. Press the mixture into the bottom of a pie dish to form the crust.
  3. Bake the Crust:
    • Bake the crust in the preheated oven for about 10 minutes or until it’s set and lightly golden. Allow it to cool.
  4. Prepare the Filling:
    • In a mixing bowl, whisk together the reduced-fat sweetened condensed milk, plain Greek yogurt, fresh key lime juice, lime zest, and egg yolks until well combined.
  5. Pour into Crust:
    • Pour the filling into the cooled crust, spreading it evenly.
  6. Bake the Pie:
    • Bake the pie in the preheated oven for approximately 15-20 minutes or until the filling is set.
  7. Cool and Chill:
    • Allow the Key Lime Pie to cool to room temperature and then refrigerate for at least 2-3 hours or until fully chilled.
  8. Top with Whipped Coconut Cream or Yogurt (Optional):
    • Before serving, top the pie with whipped coconut cream or whipped Greek yogurt if desired.
  9. Slice and Serve:
    • Slice your Healthy Key Lime Pie and serve chilled.
