Healthy Peanut Butter Greek Yogurt Breakfast Blondies by Renato Lopes
Ingredients:
1/2 cup peanut butter
1/3 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 tsp vanilla extract
1 cup oat flour
1/2 tsp baking soda
1/4 tsp cinnamon
1/4 cup mini chocolate chips (optional)
Instructions:
Preheat the oven to 350°F (175°C).
Line or grease an 8×8 inch baking dish.
In a large bowl, whisk together the peanut butter, Greek yogurt, honey or maple syrup, egg, and vanilla extract until smooth.
In another bowl, combine the oat flour, baking soda, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in chocolate chips if desired.
Spread the batter evenly into the prepared baking dish.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
Let it cool completely before slicing and serving.
