HOMEMADE Cranberry Orange Bread

Ingredients:

For the Bread:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups fresh or frozen cranberries, coarsely chopped

For the Orange Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • 1 teaspoon orange zest

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients:
    • In another bowl, whisk together the orange juice, orange zest, egg, and melted butter.
  4. Mix Wet and Dry Ingredients:
    • Add the wet ingredients to the dry ingredients, stirring just until combined. Do not overmix.
  5. Fold in Cranberries:
    • Gently fold in the chopped cranberries until evenly distributed in the batter.
  6. Fill the Loaf Pan:
    • Pour the batter into the prepared loaf pan, spreading it evenly.
  7. Bake:
    • Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool:
    • Allow the cranberry orange bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  9. Prepare Orange Glaze:
    • In a small bowl, whisk together powdered sugar, fresh orange juice, and orange zest until smooth.
  10. Drizzle Glaze:
    • Once the bread is completely cooled, drizzle the orange glaze over the top.
  11. Slice and Serve:
    • Slice the cranberry orange bread and serve. Enjoy the wonderful combination of flavors!

Notes:

  • You can use frozen cranberries if fresh ones are not available. No need to thaw them before chopping.
  • Adjust the sweetness of the glaze according to your preference by adding more or less powdered sugar.
