Homemade hot cross buns

Ingredients:
4 cups all-purpose flour
1/3 cup sugar
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1/4 tsp ground cloves
1/4 cup unsalted butter, melted
1 1/2 cups warm milk
2 large eggs, lightly beaten
1 1/2 cups raisins or currants
1/4 cup candied orange peel
1/4 cup candied lemon peel
1 package active dry yeast
1/4 cup warm water
1 egg white
1 Tbsp water
1/2 cup confectioners’ sugar
2 Tbsp milk
Instructions:
In a large bowl, whisk together the flour, sugar, salt, cinnamon, nutmeg, allspice, and cloves.
In a separate bowl, mix together the melted butter, warm milk, and beaten eggs.
Stir the raisins or currants, candied orange peel, and candied lemon peel into the flour mixture.
Add the milk mixture to the flour mixture and stir until a soft dough forms.
In a small bowl, dissolve the yeast in the warm water and let it sit for 5 minutes.
Add the yeast mixture to the dough and knead until the dough is smooth and elastic, about 5 minutes.
Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm place until it doubles in size, about 1 hour.
Preheat the oven to 375°F.
Divide the dough into 16 equal pieces and shape each piece into a ball.
Place the balls on a greased baking sheet, cover with a damp towel, and let them rise for another 30 minutes.
In a small bowl, beat the egg white with 1 tablespoon of water and brush it over the buns.
Bake the buns for 20-25 minutes or until they are golden brown.
In a small bowl, mix together the confectioners’ sugar and milk to make a glaze.
Once the buns have cooled, use a piping bag or a plastic bag with the corner snipped off to pipe a cross on top of each bun with the glaze.
