Ingredients:
For the Fried Chicken:
- 4 boneless, skinless chicken breasts
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- Vegetable oil for frying
For the Mashed Potatoes:
- 4 large russet potatoes, peeled and cubed
- 1/4 cup butter
- 1/2 cup milk
- Salt and pepper to taste
For the Gravy:
- 2 cups chicken broth
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- Salt and pepper to taste
Additional Toppings:
- Canned or frozen corn, cooked
- Shredded cheddar cheese
Instructions:
- Fried Chicken:
- Cut the chicken breasts into smaller, bite-sized pieces.
- In a bowl, soak the chicken pieces in buttermilk for at least 30 minutes (this helps tenderize the chicken).
- In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
- Heat vegetable oil in a deep skillet or Dutch oven to 350-375°F (175-190°C).
- Dredge the buttermilk-soaked chicken pieces in the seasoned flour mixture, making sure they are well coated.
- Carefully place the coated chicken pieces into the hot oil and fry until they are golden brown and cooked through (about 5-7 minutes).
- Remove the fried chicken and place them on a paper towel to drain excess oil.
- Mashed Potatoes:
- Boil the peeled and cubed potatoes until they are tender.
- Drain the potatoes and mash them with butter, milk, salt, and pepper until you achieve your desired consistency.
- Gravy:
- In a saucepan, melt the butter over medium heat.
- Stir in the flour to create a roux and cook for a couple of minutes until it turns light golden brown.
- Slowly whisk in the chicken broth until the mixture thickens and is free of lumps.
- Season with salt and pepper to taste.
- Assembling the Bowls:
- In a serving bowl, start with a layer of mashed potatoes.
- Add a portion of fried chicken on top of the potatoes.
- Sprinkle corn over the chicken.
- Pour gravy over the layers.
- Finish by adding shredded cheddar cheese on top.
