HOMEMADE KFC BOWLS

Ingredients:

For the Fried Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Vegetable oil for frying

For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk
  • Salt and pepper to taste

For the Gravy:

  • 2 cups chicken broth
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Additional Toppings:

  • Canned or frozen corn, cooked
  • Shredded cheddar cheese

Instructions:

  1. Fried Chicken:
    • Cut the chicken breasts into smaller, bite-sized pieces.
    • In a bowl, soak the chicken pieces in buttermilk for at least 30 minutes (this helps tenderize the chicken).
    • In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
    • Heat vegetable oil in a deep skillet or Dutch oven to 350-375°F (175-190°C).
    • Dredge the buttermilk-soaked chicken pieces in the seasoned flour mixture, making sure they are well coated.
    • Carefully place the coated chicken pieces into the hot oil and fry until they are golden brown and cooked through (about 5-7 minutes).
    • Remove the fried chicken and place them on a paper towel to drain excess oil.
  2. Mashed Potatoes:
    • Boil the peeled and cubed potatoes until they are tender.
    • Drain the potatoes and mash them with butter, milk, salt, and pepper until you achieve your desired consistency.
  3. Gravy:
    • In a saucepan, melt the butter over medium heat.
    • Stir in the flour to create a roux and cook for a couple of minutes until it turns light golden brown.
    • Slowly whisk in the chicken broth until the mixture thickens and is free of lumps.
    • Season with salt and pepper to taste.
  4. Assembling the Bowls:
    • In a serving bowl, start with a layer of mashed potatoes.
    • Add a portion of fried chicken on top of the potatoes.
    • Sprinkle corn over the chicken.
    • Pour gravy over the layers.
    • Finish by adding shredded cheddar cheese on top.
