Homemade! Super Simple Sausage

Ingredients:

  • 1 lb ground pork (or a mix of ground pork and beef)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika (optional, for a smoky flavor)
  • 1/2 tsp dried sage or thyme (optional for a classic breakfast sausage taste)
  • 1/4 tsp crushed red pepper flakes (optional, for a little heat)
  • 1 tbsp fresh parsley, chopped (optional for freshness)

Instructions:

  1. Mix the Ingredients:
    • In a large bowl, combine the ground meat with salt, black pepper, garlic powder, onion powder, smoked paprika, and any additional seasonings you prefer. Mix with your hands until the spices are evenly distributed, but don’t over-mix, as this can make the sausage tough.

 

  1. Shape the Sausage:
    • Divide the mixture into 8-10 equal portions and shape them into small patties or logs, depending on your preference.
  2. Cook the Sausage:
    • Heat a large skillet over medium heat. Add a little oil if your meat is very lean, or skip the oil if it has a good fat content.
    • Add the sausage patties or logs to the skillet, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side, until golden brown and cooked through (the internal temperature should reach 160°F/71°C for pork).
  3. Serve:
    • Transfer to a plate and serve hot. These sausages are perfect for breakfast with eggs and toast, or you can crumble them into pasta dishes, casseroles, or soups.

Tips:

  • Make It Your Own: Adjust the spices to suit your taste! Try adding fennel seeds, cumin, or even a touch of maple syrup for a sweeter breakfast sausage.
  • Storage: Uncooked sausage patties can be frozen on a baking sheet, then stored in a freezer-safe bag for up to 3 months. Cooked patties can be kept in the fridge for up to 3-4 days.
