INGREDIENTS
- 1 1/2 lbs baby or fingerling potatoes
- 3 tablespoons olive oil
- 2 tablespoons honey
- 3 tablespoons dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 tablespoon fresh chives, chopped
- Kosher salt and freshly ground black pepper, to taste

PREPARATION
- Preheat oven to 425°F and grease a rimmed baking sheet with nonstick spray.
- In a large bowl, whisk together olive oil, honey, dijon mustard, garlic powder, onion powder, thyme, paprika, salt, and pepper. Add potatoes and toss to coat.
- Spread potatoes out evenly on baking sheet, drizzling with any extra sauce. Bake until fork tender and golden brown, turning once halfway through, about 30 minutes.
- Sprinkle with chives and additional salt and serve. Enjoy!
