Soul Food

  • 2 pounds chicken wings
  • 1 cup pineapple juice
  • 1/4 cup honey
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)
  • Chopped fresh parsley for garnish (optional)

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil.
  2. In a saucepan, combine the pineapple juice, honey, lemon juice, lemon zest, minced garlic, soy sauce, salt, and black pepper. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes, stirring occasionally.
  3. If you prefer a thicker glaze, mix the cornstarch with a little water to make a slurry. Add the slurry to the saucepan and cook for an additional 1-2 minutes until the sauce thickens slightly. Remove from heat and set aside.
  4. Place the chicken wings on the prepared baking sheet and season them with salt and pepper. Bake in the preheated oven for 25-30 minutes, or until the wings are golden brown and cooked through.
  5. Once the wings are cooked, remove them from the oven and brush them generously with the honey pineapple lemon glaze. Make sure to coat all sides of the wings.
  6. Return the glazed wings to the oven and bake for an additional 5 minutes, or until the glaze caramelizes and becomes sticky.
  7. Remove the wings from the oven and let them rest for a few minutes. Garnish with chopped fresh parsley, if desired, for added freshness.
  8. Serve the Honey Pineapple Lemon Wings hot as an appetizer or main course. They can be enjoyed on their own or served with a side of steamed rice or a salad.

These wings are sure to be a hit at any gathering or family meal. The combination of sweet honey, tangy pineapple, and zesty lemon creates a tantalizing flavor experience. Enjoy!
