  • 1/2 cup sugar-free salsa
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 4 low-carb tortillas
  • 2 tbsp avocado oil (for frying)

  • Sour cream

  • Diced tomatoes

Instructions:

  1. Prepare the filling:
    Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned. Drain excess fat if necessary.
  2. Add seasonings:
    Stir in the onion, garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook until the onion softens. Add the salsa and simmer for 2–3 minutes until slightly thickened. Remove from heat and let cool slightly.

  4. Fry the chimichangas:
    Heat the avocado oil in a skillet over medium heat. Place the chimichangas seam-side down in the skillet. Cook for 2–3 minutes per side, or until golden brown and crispy. Use tongs to flip them carefully.
  5. Serve:
    Remove the chimichangas from the skillet and serve warm with your choice of keto-friendly toppings like sour cream, guacamole, or salsa.

  • Use sturdy low-carb tortillas: Look for ones that can hold the filling without tearing. Warming them slightly before assembling can make them easier to roll.
